28 December 2023

A homemade version of a popular coffee that can help save money and is less in sugar compared to coffee shop alternatives.

Nutritional highlights

The oat milk in this drink helps to lower sugar compared to using other milks. The only sugar coming from the homemade syrup.

The oat milk used in this recipe is also fortified with vitamins and minerals making this a good source of vitamin D, B2, B12 and calcium.

Vitamin D is essential for bone health, as it is required for our bodies to absorb calcium which is needed for our bones. And B vitamins are needed in order to turn the food we eat into energy for our bodies to use. They are also involved with the creation of red blood cells.

Ingredients

Makes 1 serving

Preparation time: 7 minutes

Cooking time: 10 minutes

  • 30ml espresso or strong coffee
  • 250ml no sugar oat milk
  • 12.5g granulated sucralose sweetener
  • 100ml pure apple juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Method

To make the syrup add the sweetener, apple juice, vanilla extract and cinnamon to a saucepan over a medium heat.

Whisk to mix and also whisk whilst heating. Bring to a simmer and allow the syrup to bubble slightly whilst still whisking.

When it is a similar consistency to honey remove from the heat and allow to cool.

In a saucepan over medium heat, add the milk and 1 tbsp of syrup. Stir frequently to combine the two for 5 minutes or until completely mixed and frothy.

Add the espresso or strong coffee to a large mug and pour the milk mixture on top.

Healthy swaps/tips

  • The syrup will provide around 10 servings or 5 if you want to use 2 tablespoonfuls per mug.
  • Want to make it an iced latte? Just let the milk and espresso cool before filling your mug/glass with ice cubes and adding in the milk mixture and espresso.
  • Decorate with spices or squirty cream!
