This recipe provides us with 2 of our 5 a day, due to the apple and the medjool dates.
Apples are a good source of vitamin C, fibre and antioxidants. Vitamin C helps to protect our cells, keep our skin, blood vessels, bones healthy and helps with wound healing.
Apples also contain the soluble fibre pectin, which is a prebiotic which means it helps to feed the good bacteria in our gut which can improve our gut health but also manage our cholesterol and blood sugar levels.
Antioxidants are important to help protect our cells from oxidative damage.

Apple and rhubarb crumble with oat and walnut topping
Ingredients
Makes 6 servings
Preparation Time: 35 minutes
Cooking Time: 0 minutes
- 450g medjool dates
- 60ml semi skimmed milk
- 1 tbsp vanilla extract
- 1 tsp ground cinnamon
- 6 granny smith apples
Method
Add all the ingredients, apart from the apples, to a food process or powerful blender.
Blend until smooth and spreadable or about 5-10 minutes. It will be thick but should still be spreadable.
Insert your sticks into the top of the apples and set them out.
Spread the caramel all over the apple, then repeat for the other 5.
Then place all the apples into the fridge for 25 minutes to set.
Healthy swaps / top tips:
- If the mixture is too thick add some more milk or water.
- To make it vegan swap out the milk for almond or oat milk.
- Decorate with chopped nuts, sprinkles or some chocolate sauce.
