Blueberry Baked Oats

This is a great breakfast recipe that's simple and easy to make and provides one of our five a day! 

Nutritional highlights

This breakfast provides us with one of our five a day through blueberries.

Blueberries are a fantastic source of antioxidants that have been shown to reduce inflammation and lower the risk of depression.

They are also a good source of fibre which can help increase the good levels of bacteria in our gut.

Healthier Chocolate Yogurt

Ingredients

Makes 6 servings

Preparation time: 5 minutes

Cooking time: 35 minutes

  • 600g fat free natural yoghurt
  • 1 egg
  • 240g oats
  • 1 tsp vanilla extract
  • 480g blueberries

Method

Heat the oven to 200C and mix all the ingredients in a large bowl.

Pour the mixture into a 2L ovenproof dish and bake for 30-35 minutes, or until it's piping hot in the middle. 

Healthy swaps

  • Why not batch bake these and have them over the week! Simply store in the fridge and reheat in the microwave until they are hot through. 
  • You can use flavoured yoghurt if you wish.
  • Why not add in other berries or a banana!
