- 1.5 tbsp olive oil
- 2 tbsp jerk spice sauce
- 200g (drained weight) jackfruit, drained and shredded
- 1 little gem lettuce, shredded
- 2 satsumas, peeled and segmented
- 1 red pepper, diced
- ½ cucumber, thinly sliced
- ½ mango, peeled and diced
- ½ tbsp poppy seeds
- 1 lime
Method
Preheat the oven to 200°C.
Into a bowl, add the olive oil and jerk seasoning. Stir to combine before adding the shredded jackfruit and coating thoroughly.
Spread the jackfruit onto a baking tray and place in the oven for 30 minutes, stirring half way through.
While the jackfruit is cooking you can prepare the salad.
Into a large bowl, toss together the shredded lettuce, satsuma segments, red pepper, cucumber, and mango.
Remove the jackfruit from the oven and serve on a bed of the mango salad.
Top with poppy seeds and serve with a wedge of lime.
