Vegan nut roast

Christmas dinner doesn't have to be boring or complicated when cooking up a vegan option. Try this easy nut roast to serve with all the trimmings this festive season!

Nuts are a valuable source of nutrients, particularly if you're following a vegan diet. They're a great source of protein, fats and fibre, meaning they really do pack a punch. Most of the fat found in plain nuts is what is classed as good fats (omega 3 and 6) meaning they're great for preserving brain and heart health.

Ingredients list

(Makes 4 servings)
Preparation Time: 5 minutes
Cooking Time: 45 minutes

  • 300ml olive oil
  • 1 onion, chopped
  • 60g mushrooms
  • 30g wholemeal flour
  • 140ml vegetable stock
  • 30g porridge oats
  • 225g crushed mixed nuts (almonds/walnuts/cashews/brazil nuts)
  • 100g wholemeal breadcrumbs
  • 1tsp sage


Pre heat the oven to 180 degrees C.

Prepare a loaf tin by greasing.

In a pan, heat the oil over a medium heat.

Add the onions and mushrooms to the pan and cook gently for 5 minutes.

Add the flour and stock, stirring thoroughly. Simmer for 2 minutes.

Add the porridge oats, mixed nuts, wholemeal bread crumbs and sage.

Mix well and cook for a further 3 minutes.

Bring off the heat and put the mixture into the loaf tin.

Cover with greaseproof paper and bake in the oven for 30 minutes.

Serve alongside the rest of your Christmas spread!
