This is a great alternative to the usual roast potatoes with your Christmas or Sunday dinner with a sweet twist.

This recipe will provide us with one of our five a day thanks to the sweet potato. Sweet potatoes not only gives us energy in the form of carbohydrates but also provides us with vitamin A in the form of beta carotene. Beta carotene is used by the body to form vitamin A, with a single sweet potato providing us with all our daily vitamin A! This makes sweet potatoes a great food to keep our immune system working at full power as well as keeping our eyes healthy.

· 900g sweet potatoes, cut into 1-inch (2.5cm) wedges
· 2 tbsp olive oil
· 1 red chili
· 1 tbsp vanilla extract
· 1 tbsp maple syrup
Method
Preheat oven to 200˚C. Mix the potatoes, olive oil, vanilla extract and chilli into a large bowl, ensure the potatoes are all covered.
Place baking paper on an oven tray and place the potatoes on top.
Roast potatoes until tender which should be about 25 to 30 minutes. Once cooked serve as a side.
Healthy swaps/tips
· You can swap the vanilla extract for vanilla paste.
· Use a knife or fork to test if the sweet potato is soft all the way through. You should feel little resistance.
