A healthier twist on the classic, these caramelised cauliflower florets with onions and parmesan are a great addition to the Christmas feast.
This dish contains a variety of vitamins and minerals that are essential to good health; the cauliflower is a rich source of vitamin C, which plays an important role in the protection of joints and bones through the production of collagen, and the parmesan is a good source of protein and high in calcium to maintain bone health and regulate muscle contractions, including our heartbeat.

Start by preheating the oven to 180C.
Cut the cauliflower into florets and onion into wedges. Spread out onto a baking tray and mix with the crushed garlic and herbs. Drizzle with oil and toss together until evenly coated.
Roast for 35-40 minutes or until almost tender, turning occasionally. Sprinkle over the grated parmesan and roast for a further 10 minutes until caramelised.
