Coronation turkey

This simple spiced yoghurt coating will help to brighten up any turkey leftovers, layer it into a sandwich or serve with a rice salad for a lighter meal.

The festive season is a prime time for turkey and not only does it make a great centre piece but it is also packed with nutritional benefits. Turkey is a rich source of low fat protein, which is essential to help muscle growth and repair and it also helps you to feel fuller for longer, curbing those cravings for snacks. Accompany this with yoghurt and you are onto a winner. Yoghurt too has a high protein content as well as calcium to help keep your bones and teeth strong and healthy. 

Ingredients list

(Makes 2 servings)

  • 100g plain yoghurt
  • 2 tsp curry powder
  • 2 garlic cloves (crushed)
  • 1 red chilli (optional)
  • Handful of raisins/currants/dried apricots
  • Leftover turkey


Depending on your preferred taste, chop the chilli finely (optional) and add to a large bowl with the yoghurt, curry powder, dried fruit and crushed garlic.

Mix thoroughly then add the leftover shredded turkey and combine. The flavour infuses best when the turkey is added while it’s still warm, but this isn’t essential. 

You can use this tasty mix as sandwich filler, accompany it with a rice salad for a main meal or top crostinis to create mini canapés for New Year’s celebrations.

Top tips:

To reduce the fat content of turkey, remove the skin and choose the breast meat.

Darker turkey meat typically contains a higher fat content than the lighter meat which is slightly higher in protein.

When choosing yogurts make sure to watch out for those that claim to be low in fat (but are actually high in sugar) and vice versa.
