Pear and pecan salad

A perfect combination of flavours and textures makes this salad enjoyable at any time of the year.

Putting fruit into a salad is a great way to freshen things up. Pears are a leader of the pack when it comes to fibre in fruits and they also offer a source of vitamin K which helps with bone health and wound healing.

Ingredients list

(Makes 2 servings)

Cooking Time: 10 minutes

  • 50g pecans
  • 2tbsp agave syrup
  • 200g mixed salad leaves
  • 2 pears (sliced)
  • 1 avocado (pitted and diced)
  • 75g raisins
  • 1 tbsp balsamic vinegar
  • 1tbsp olive oil


Preheat the oven to 170°C.

Line a baking tray with greaseproof paper.

Toss the pecans in a bowl with the agave syrup and bake for 10 minutes, turning after 5 minutes.

Place them to one side to cool.

In a bowl, toss the salad leaves, sliced pear, avocado, raisins and caramelised pecans.

Stir together the balsamic vinegar and olive oil then drizzle over the salad before serving.

Healthy swaps

Reduce the portion size or serve amongst more people alongside a favourite main dish, or bulk out with a protein source such as chicken or tofu.
