An avocado twist on banana bread!
Avocados are extremely versatile, but have you ever thought about using them in baking?! You can infact actually substitute butter in some recipes for avocado, they add a smooth, creamy texture to cake along with a good source of unsaturated fats!
The natural sweetness from the banana means this treat will hit the spot if you’re looking to curb those sugar cravings.

Preparation Time: 15 minutes
Cooking Time: 50-60 minutes
Preheat the oven to 180°C.
Line a loaf tin.
Sift the flour into a bowl, then stir in the sugar and baking powder. Place to one side.
Remove the skin and stone from the avocado and place in a separate bowl.
Add the banana to the avocado and mash the ingredients.
Mix in the egg and milk, combining vigorously.
Gradually add the avocado and banana mash mixture to the dry ingredients and blend until smooth.
Add the chopped walnuts into the mixture and stir.
Pour the mixture into the loaf tin and place in the oven for 50-60 minutes.
Check the bake is ready by inserting a toothpick in the middle – if the toothpick comes out dry or with crumbs, then it’s ready!
